Stop Paying $5 at the Drive-Thru: 7 Freezer Burrito Tricks That Actually Work Stop spending $5 at the drive-thru every morning for a breakfast burrito you could have waiting in your own freezer. In this episode of Ruby’s Sunday Table, Ruby shares 7 freezer burrito tricks that actually work—so you can make a big batch ahead of time without ending up with soggy tortillas, rubbery eggs, greasy filling, or a frozen burrito that’s still cold in the middle. The biggest enemy? Water. Ruby explains why every ingredient needs to cool completely before it touches the tortilla, why salsa and hot sauce should stay OUT of the burrito until serving, and why she skips potatoes when making a batch for the freezer. Then comes Ruby’s “dry line” trick: thick refried beans first, shredded cheese second, and the eggs and sausage on top. This creates a barrier between the moist filling and the tortilla to help prevent that dreaded soggy bottom. After rolling, Ruby even toasts each burrito in a dry cast-iron skillet to seal the seam and dry the outside before freezing. And don’t skip Trick #7—the reheat. Ruby uses the microwave only to warm the frozen burrito through, then finishes it in a hot, dry skillet to bring back that crispy outside. One batch makes around 20 breakfast burritos, giving you weeks of grab-and-go breakfasts without sitting in another drive-thru line. What do you put inside your breakfast burritos? And how much is your local drive-thru charging for one these days? Tell Ruby in the comments!
