We ❤️‍🔥 love what we do, we love cooking 🍔 fast recipes and enjoy preparing food 👯‍♀️ together. Want beautifully creamy mashed vegetables without a watery texture? Discover my butter-first trick for turning parsnips, celery root, and potatoes into an irresistibly smooth, comforting side dish! 🥔❤️ Today we are sharing a delicious Romanian-inspired recipe that combines the natural sweetness of parsnips, the earthy flavor of celery root (celeriac), and the fluffy comfort of potatoes. With just a little butter, warm milk, and a few simple kitchen secrets, these humble vegetables become a wonderfully creamy mash that's perfect for family dinners, Sunday lunches, and festive meals. This recipe also brings back precious memories of my beloved Granny Victoria, whose love of Romanian home cooking continues to inspire us. ❤️ 🥕 INGREDIENTS (4 SERVINGS) • 2 medium potatoes, preferably starchy • 1 medium celery root (celeriac), peeled and chopped • 2 medium parsnips, peeled and chopped • ½ cup (120 ml) whole milk, warmed • 2–3 tablespoons unsalted butter • Salt, to taste • Freshly ground black pepper, to taste • Optional: a pinch of nutmeg or thyme 👩‍🍳 HOW TO MAKE THIS CREAMY MASH 1. Peel and cut the potatoes, parsnips, and celery root into even 2–3 cm chunks. 2. Place the vegetables in salted water, bring to a boil, and simmer for approximately 15–20 minutes until fork-tender. 3. Drain thoroughly and allow the excess steam to escape for a few minutes. 4. Add butter to the hot vegetables and mash everything together BEFORE adding the milk. 5. Gradually pour in the warm milk, mashing continuously until beautifully smooth and creamy. 6. Season with salt, freshly ground black pepper, and optional nutmeg or thyme. For an extra-smooth texture, briefly use a mixer on low speed, taking care not to overmix. Finish with fresh green herbs. I also decorated mine with a piece of pickled cauliflower for a lovely tangy contrast! ✨ OUR KITCHEN SECRETS ✓ Use warm milk, never cold. ✓ Add butter before milk for a rich, creamy texture. ✓ Drain the vegetables thoroughly to avoid a watery mash. ✓ Mash while hot, and don't overmix. ✓ For a vegan version, replace dairy milk with warm unsweetened oat milk and butter with olive oil or vegan butter. 🇷🇴 DISCOVER MORE ROMANIAN COOKING Visit our cooking blog for authentic flavors, family memories, traditional Romanian dishes, and more delicious recipes: https://cookingromania.vivianaball.ro/ ❤️ JOIN THE COOKING ROMANIA BY VIVI FAMILY!
