Thanks to the generosity of Chairman Yoshimura, we are able to post this preparation video! With his 80th birthday approaching, this may be his last long appearance on YouTube! Yoshimura-ya is the origin of Iekei ramen and continues to boast an overwhelming number of customers among Iekei ramen restaurants. We went behind the scenes of Chairman Yoshimura Minoru's preparation, who continues to protect that taste. We got an up-close look at the preparation of the char siu, toppings, and soup! Filming lasted for about 8 hours and 30 minutes, from around 12:30 AM to just before 9:00 AM! As you can imagine, it was a long day, and there was a mishap where the camera stopped working due to a dead battery, but we managed to film somehow. We edited the approximately 8 hours and 30 minutes of video down to about 3 hours, and then edited it further into an approximately 25 minute digest version for this post! Please note that the video, which is about 3 hours long, will be edited and posted this summer (planned to be in two parts). This time, we hope to have shown you a glimpse of Chairman Yoshimura's true self, going beyond just the preparation process. [Announcements] ① We always take great care to maintain hygiene both inside and outside the kitchen! We wash our hands regularly. Please rest assured! ② After transporting vegetables from the work area by car, we immediately return the car to the work area and then walk to the shop! Once the preparation is finished, we walk back to the work area or our own rooms. There is absolutely no drunk driving!
