Ingredients
Brinjal (began) – ½ kg (cut as shown)
Potatoes – 4 (cut in small pieces)
Tomatoes – 2 medium size (Chopped) + green chilies – 2 (cut) + garlic cloves – 10 to 12 + ginger- 1 pieces (cut) {all grinded together in a puree}
Onions – 11/2 medium size (chopped)
Oil – 1 small cup (mustard oil)
Yogurt – 5 tbs
Homemade crushed pickle – 2 tbs
Red chili powder- 1 tsp
Kashmiri red chili powder – 1 tsp
Turmeric powder – ½ tsp
Coriander powder- 1 ½ tsp
Salt – 1 ½ tsp
Whole white cumin seeds – 1 tsp
Cinnamon stick – 1 piece
Kalonji (nigella seeds) – 1 tsp
Black rai dana (mustard seeds) – 1 tsp
Fenugreek seeds – ½ tsp
Green chilies – 4 (garnish)
Recipe
First grind together tomatoes, green chilies, ginger and garlic. This will convert them into a puree form. Put it aside to use later. Now put a cooking pot on medium to high flame and pour in the oil to heat up. Once it’s hot add chopped onions into the pot and stir to fry and cook. After a while add whole white cumin seeds and cinnamon stick into the pot and stir to mix and cook. Then after a while add mustard seeds and fenugreek seeds into the pot and stir to mix and cook. Then add the tomato, green chilies, ginger and garlic puree you made earlier into the pot and mix to cook. Cook for a while until bubbles are formed and then add chopped potatoes into the pot and stir to cook. Let the potatoes cook in the gravy for a few minutes. Then add salt, red chili powder, turmeric powder, coriander powder and Kashmiri red chili powder into the pot and mix to cook. Then add the brinjal into the pot as shown and mix to cook for a while. Then slow the flame and close the lid of the pot for brinjal to cook in steam.
Then after a few minutes open the lid of the pot and you will see brinjal has released its own water and is cooking in it. Stir a bit and close the lid again for a while. Then open again and stir the spoon. Now add half a cup of water and yogurt into the pot and mix to cook. Make sure to stir the spoon in a way that brinjal doesn’t break. Close the lid of the pot again for the gravy to cook in steam.
Now open the lid of the pot after 15 mins and you will see brinjal soft and tender. Stir a little and add kalonji (nigella seeds) into the pot and mix to cook. Then add homemade crushed pickle into the pot and mix to cook. Now after cooking for a while close the lid of the pot and let it cook for another 10 mins until oil comes up as shown when you open the lid. Then add the sliced green chilies to garnish and mix. Close the lid for few minutes until ready.
Your delicious achari began aloo is ready to devour with rice or roti as per your taste and preference. Enjoy.
