Baking with Fire – Marita’s Traditional Tortahan
In a small roadside bakery in Negros Oriental, Marita makes Tortahan the traditional way – by hand, over a simple wood-fired oven.
There are no mixing machines, no baking trays and no temperature controls. Small pieces of dough are placed on banana leaves and baked with the changing heat of burning coconut shells and glowing embers.
Marita knows from years of experience when the Tortahan is ready. Some pieces may come out a little darker than others – but that is part of baking with fire. 😊
While she works, customers and friends drop by, freshly baked Tortahan is packed for sale, and the day slowly comes to life around this tiny bakery.
