DIVINE BREAD
Fundamental Irreducible Bread
aka: “Nuke Bread” “Avatar Bread” “Just Bread”.
5 Cups Flour
450 mL Water at 120F Fahrenheit (49 Celcius)
15 mL Yeast (1.0 Tablespoon)
Ferment/Rise in preheated oven at start temperature of 150F (66C). *Do not heat oven with dough in the oven or after the pre-heat.
Bake at 410F for 25 minutes (210C) in a natural gas oven, or 20 minutes in an electric oven. Natural gas combustion(methane or propane) produces considerable amounts of water(steam). Electric ovens dries the dough much faster resulting in a quicker bake with much greater sensitivity to exact baking time in order to not result in "over-drying" the bread.
Stages:
1) 15 minutes to prepare.
2) 40 minutes to rise/ferment.
3) 10 minutes to heat oven.
4) 20 or 25 minutes to bake.
Total = 85-90 minutes to complete bake.
Equipment List:
1) Oven.
2) Oven Thermometer.
3) 9 inch x 5 inch pressed aluminum bread pan.
4) Tempered Glass Preserves Jar(Mason) 1 Liter or 1 Quart size.
5) Large Mixing Bowl.
6) Large Steel Spoon.
7) 15mL/1.0 Tablespoon Measuring Cup.
8) 500mL Graduated Cylinder.
9) 1.0 Cup Measuring Cup.
10) Food Thermometer with 5 inch probe or longer.
11) Vegetable Shortening or Lard to grease pan.
12) Cooling Rack.
13) Oven Mitts/Welding Gloves.
14) Kettyle or Pot to heat water for 120F.
15) Knife for levelling flour measuring cup and yeast tablespoon.
Procedure:
Heat oven so it is a temperature of 150F when kneading is done and ready for fermentation(rise).
Stir yeast into 120F water.
Pour water-yeast mixture into flour.
Swirl the bowl/mixture aggressively until swirling effectively does not have any further effect on mixing.
Toss mixture with large spoon until no further relative mixing is achievable.
Knead dough.
Compress into a sphere(ball) between both hands.
Roll dough between hands to form a capsule shape.
Put dough into a greased bread pan and put it into oven at elevated temperature of 150F.
35-40 minutes for the fermentation(rise).
Pull risen dough out of oven, heat oven to 410oF; and then put dough in for 25 minutes for a natural gas oven and 20 minutes for an electric oven.
*Keys of Recipe:
1) No Salt - It kills yeast.
2) Elevated Fermentation Temperature acts as a Catalyst.
3) Maximized surface area when mixing: Swirl/Toss/Knead. Swirl the bowl of flour. Then use a big spoon to toss it and then do the traditional kneading.
I got advanced neurological lyme disease from a tick bite in 2015 and with no savings, no family help and inability to function i was instantly impoverished. I had to reduce all expenses and knew my food budget would have to be minimized but nutritional - homemade bread was the key to that. I could not find a basic bread recipe and knew, by my intuition, that in time, i would solve this elusive problem to develop a basic bread recipe. With my science and physics background from my Petroleum Engineering education and my experience in process analysis; and combined with my perseverance and determination, against hardcore lyme disease, it took about 10 years to discover, experiment, develop, and fine-tune this ultra simple, fast and irreducible bread recipe. Now virtually anyone can make homemade bread easily and quickly and for the lowest possible cost. The next challenge, if time and money and opportunity allows, is to translate this recipe into “full-grain” bread by milling wheat berries into flour. The recipe has been proven to accommodate rye flour by substituting 1 cup of wheat flour with 1 cup of rye flour with no deviation in the recipe. I hope you try this recipe as it is very easy and yields great-tasting bread. Just sprinkle salt on it as one of the keys to this breadmaking process is the absence of salt.
