I learned this trick in a French pastry shop! With one sheet of puff pastry, juicy plums, and almonds, you can make a delicious homemade dessert with golden, flaky layers and a sweet, caramelized filling. This easy plum tart combines a buttery almond filling, a touch of cinnamon and vanilla, and tender caramelized plums beneath a delicate pastry lattice. Finished with sliced almonds, it’s a wonderful dessert to enjoy with a cup of coffee or tea. 🥧 INGREDIENTS For the pastry and almond filling: 1 sheet puff pastry (500 g) Melted butter, for brushing 2 tbsp sugar Vanilla sugar, to taste A pinch of ground cinnamon Ground almonds, to taste For the egg wash: 1 egg yolk 1 tsp milk (5 ml) For the plum filling: Fresh plums, halved and pitted Butter 4 tbsp sugar For the topping: Sliced almonds (almond flakes) 👩‍🍳 INSTRUCTIONS 1. Unfold the puff pastry on parchment paper and brush it lightly with melted butter. 2. Combine the ground almonds, sugar, vanilla sugar, and cinnamon. Spread the mixture over the pastry. 3. Fold the edges inward to create a rectangular border. 4. Mix the egg yolk with milk and brush the folded pastry edges. 5. Melt the butter and sugar in a saucepan. Add the halved plums and stir gently until they soften and release their juices. 6. Spoon the plum filling into the center of the pastry. 7. Arrange thin pastry strips over the plums to create a lattice pattern. 8. Brush the lattice with egg wash and sprinkle sliced almonds over the pastry borders. 9. Bake in a preheated oven at 350°F (180°C) for 30–40 minutes, until the pastry is golden and crisp. 10. Let the tart cool slightly, then cut into squares and serve.
