Open the fridge, find curdled milk, and your first instinct is probably to throw it away. Thousands of years ago, however, humans learned to turn controlled changes in milk into one of the most useful food technologies in history. #LichSuPhoMai is a story of early herders, pottery, fermentation, microbes and the long search for a way to preserve milk before refrigeration existed.
In this LVT-63 episode, we explore archaeological evidence for early dairying, the perforated pottery from Neolithic Poland linked to cheese-making around 7,000 years ago, and ancient kefir-style cheese from Xiaohe that preserved proteins and microbial DNA. The deeper surprise is that fermented dairy may also have helped people use milk long before adult lactase persistence became common.
