Ingredients Veal Goulash • 800 g veal shoulder (1.75 lb) • Salt, pepper, mild paprika • 2 tbsp oil • 400 g onions (0.9 lb) • 150 g carrots (5 oz) • 120 g celery (4 oz) • 1 leek • 500 ml brown stock / 2 cups • 1 bay leaf • 250 g heavy cream / 1 cup Mushrooms • 250 g king oyster mushrooms (9 oz) • 1 tbsp oil • Salt & pepper Preparation Steps 1. Season veal with salt, pepper, and mild paprika. 2. Sear using Hands Only pressure technique. 3. Add onions (1:1 ratio to meat) and sauté. 4. Add carrots and celery; lightly brown. 5. Add stock, leek, bay leaf; braise 1–1.5 h at 140°C / 285°F. 6. Sauté mushrooms separately until golden. 7. Add cream, reduce to a smooth sauce. 8. Fold in part of the mushrooms. 9.
