Chinese Mochi - Stretchy - Soft - Taste Delicious Cooking Recipe: Make 24 Chinese Mochi Ingredients: 1 package glutinous rice flour (16 oz) 1 1/2 packages frozen shredded coconut (16 oz each package) 2 cans coconut milk (13.5 oz each can) 1 cup crushed roasted peanuts Mini baking cups Sugar, olive oil Steamer Cooking Instructions: *Mix the glutinous rice flour with 2 cans of coconut milk, 5 tablespoons of white sugar, and 1 tablespoon of olive oil; stir thoroughly until smooth. Steam the mixture for 40 minutes with medium-low heat, then let it cool until slightly warm before proceeding to shape the cakes. While the cake flour is steaming, prepare the filling: Combine 2 cups of shredded coconut, 1 cup of crushed roasted peanuts, and 1/2 cup of sugar in a frying pan. Stir well and cook over medium heat for about 5 minutes or until the mixture thickens and the liquid has evaporated. Remove from heat. Arrange all the prepared ingredients on the table. Put on cooking gloves and lightly coat your hands with a little cooking oil; take a portion of the steamed dough and flatten it in your palm. Use a teaspoon to scoop the filling and place it in the center (watch the video), gather the edges to seal the filling inside, and roll the dough into a ball. Roll the ball in shredded coconut, then place it into a mini baking paper cup. Repeat this process until all the cakes are made. Now you can enjoy those delicious homemade Chinese mochi make in your own kitchen. Note: Mochi can store in the fridge (frozen side) up to a few months.
