Bring the taste of a German beer hall to your kitchen with juicy bratwurst, golden beer-braised onions, warm sauerkraut, mustard, and crusty rolls. The sausages are gently simmered for flavor, then grilled until the casing is deeply browned and irresistible.
Ingredients for 4 servings:
• 4 fresh pork bratwurst sausages
• 1 tablespoon vegetable oil
• 2 medium yellow onions, thinly sliced
• 2 garlic cloves, finely chopped
• 350 milliliters, or 1 1/2 cups, pale German-style beer
• 500 grams, or about 17 1/2 ounces, sauerkraut, drained
• 1 teaspoon caraway seeds
• 1 bay leaf
• 1/2 teaspoon salt
• 1/4 teaspoon black pepper
• 1 tablespoon unsalted butter
• 4 crusty bread rolls
• 4 tablespoons German mustard
Tips:
Simmer the bratwurst gently instead of boiling it, and do not pierce the casing. Finish the sausages on a hot grill or grill pan for a richly browned exterior. A mild lager is a good substitute for German beer, and jarred, canned, or refrigerated sauerkraut will all work when drained first. For food safety, the sausage should reach 71°C or 160°F in the center.
