Kai Holege Recipe | Traditional Karnataka Sweet
Required Ingredients
*For the dough:*
½ bowl Chiroti Rava
½ bowl Maida
A pinch of turmeric powder
A pinch of salt
Water, as required
Oil, as required
*For the filling:*
1 cup grated coconut
½ bowl sugar
2 tablespoons raw rice, soaked in water
2 cardamoms
2 cloves
*For roasting:*
Ghee, as required
Preparation
First, let us prepare the maida dough.
In a bowl, add **½ bowl chiroti rava, ½ bowl maida, a pinch of turmeric powder and a pinch of salt**. Add water little by little and prepare a dough that is **softer than chapathi dough**.
Add a little oil on top and knead the dough once again. Add a little more oil on top, cover it and let it rest for **30 minutes**.
Now let us prepare the filling.
Take the *2 tablespoons soaked raw rice* and drain the water completely. Add the soaked rice, *½ cup of the grated coconut and ¼ bowl of the sugar* and grind them into a smooth paste.
Next, add the remaining *½ cup grated coconut, remaining ¼ bowl sugar, 2 cloves and 2 cardamoms* and grind everything into a coarse paste.
Transfer both mixtures into a pan and cook them until **all the moisture evaporates**. To check if the filling is ready, wet your hands with a little water and touch the mixture. The filling should **not stick to your hands**.
Allow the filling to cool completely and then make small balls out of it.
Take a small portion of the prepared dough and roll it into a small round, chapathi-like shape. Place one filling ball in the centre and cover it completely with the dough.
Gently roll it again into a thin, chapathi-like round.
Heat a pan over *medium flame* and place the rolled *Kai Holege* on it. Roast both sides until they turn **golden brown**, adding ghee as required while roasting.
Your delicious and traditional *Kai Holege* is now ready to serve. Enjoy it hot with a generous touch of ghee!
