Crispy golden skin, juicy meat in every slice, and a silky pan gravy made from the drippings. This is the Thanksgiving turkey I've made for over 40 years, and it never comes out dry. 🦃 Today I'll walk you through every step, from thawing and dry brining to roasting, resting, gravy, and carving, plus the 3 mistakes that ruin a turkey (and a bonus one most people make with the gravy!). 🍽️ One 12–14 lb turkey | Serves 10–12 ⏱️ Roasting time: about 3 to 3½ hours 📝 INGREDIENTS DRY BRINE • 3½ tbsp kosher salt (Diamond Crystal; use half if using Morton) • 1 tbsp brown sugar • 2 tsp black pepper HERB BUTTER • ½ cup butter, softened • 2 tbsp chopped sage, thyme & rosemary • 3 garlic cloves, minced • Zest of 1 lemon FOR ROASTING • 1 onion, 1 lemon & herb sprigs for the cavity • Onion, carrots & celery for the pan • 2 cups chicken broth GRAVY • ¼ cup turkey fat • ¼ cup all-purpose flour • 4 cups drippings & broth • Salt & pepper 🗓️ THE PLAN • Thaw in the fridge: 1 day per 4–5 lb (about 3 days for 14 lb) • Dry brine uncovered in the fridge: 1–3 days • Roast: 30 min at 425°F / 220°C, then 325°F / 165°C, about 13 min per lb • Done: 165°F / 74°C in the thickest part of the breast and thigh • Rest: 30–45 minutes before carving ⚠️ THE MISTAKES 1. Covering the turkey while it dry brines 2. Trusting the pop-up timer 3. Carving it right away BONUS: Throwing out the drippings 📌 CHAPTERS 0:00 Why Most Turkeys Come Out Dry 0:30 The Plan: Thawing & Dry Brining 1:50 Herb Butter & Prep 3:20 Roasting 4:50 How to Tell It's Done & Resting 5:50 Easy Pan Gravy 6:50 How to Carve a Turkey 7:30 Taste Test 💬 Who's carving the turkey at your house this year?
