My first Basque Cheesecake with a Little Twist

A quiet morniing spent baking my first Basque Cheesecake - with a little twist. I had mascarpone in the fridge that was about to expire, so I decided to add it to the cheesecake, along with cottage cheese for a little extra goodness. It wasn't quite the traditional recipe, but sometimes the best things come from simply using what you have and seeing where it takes you. From writing down the recipe to mixing the batter, waiting for it to bake, and patiently letting it cool before the first slice - this was a slow, simple baking day at home.
