Sugar Narali Bhat | साखरेचा नारळी भात Narali Bhat is a traditional Maharashtrian festive rice preparation made with coconut and sweetness. In my previous video, I shared one style of Narali Bhat. This time, I’m sharing another version — Sugar Narali Bhat, made with sugar, freshly grated coconut, saffron and aromatic spices. This recipe gives you beautifully coloured, fragrant and flavourful rice with a lovely balance of sweetness and coconut. Do try this different version of Narali Bhat and let me know which one you prefer! ❤️ Sugar Narali Bhat Ingredients 1½ wati basmati rice 3 wati water 1 teaspoon ghee 4–5 cloves 3–4 green cardamom pods 1½ wati sugar ¾ wati freshly grated coconut ½ wati water Juice of ½ lemon A few saffron threads A few drops of orange food colour Cashews and raisins Method Wash the basmati rice thoroughly and drain it. Leave it aside for about 2 hours, until the rice is almost dry. Heat ghee in a pressure pan. Add cloves and green cardamom and sauté for a few seconds. Add the drained rice and roast gently for about 2 minutes. Meanwhile, bring 3 katories of water to a boil. Add the boiling water to the rice and cook in the pressure pan for 3 whistles. Let the pressure release naturally. Open the pan and transfer the cooked rice to a plate. Spread it out gently and allow it to cool. Once the rice has cooled, sprinkle a little orange food colour over it and gently mix. In the same pressure pan, add 1½ wati sugar and ½ wati water. Cook until the sugar dissolves. Add the lemon juice, freshly grated coconut, cashews, raisins, saffron threads and a few drops of orange food colour. Mix gently so that the colour spreads evenly. Cook the mixture until it reaches one-string consistency. Add the cooked rice and gently mix everything together. Cover and cook for 2–3 minutes. Open the lid and gently mix again. Place a small tava underneath the pan to prevent the rice from burning. Cover and cook on low heat for another 5 minutes. Turn off the heat and give it one final gentle mix. Your fragrant and beautifully coloured Sugar Narali Bhat is ready to serve!
