Upasache Stuffed Appe
Ingredients
For the Appe Batter
1 katori varai (bhagar)
½ katori sabudana
1 katori curd (dahi)
Salt to taste
1–2 green chilies, crushed
A pinch of baking soda or Eno (add just before making the appe)
For the Coconut Stuffing
1 katori freshly grated coconut
½ teaspoon ghee
½ teaspoon cumin seeds
1–2 green chilies, crushed
2 tablespoons cashew nuts (optional)
2 tablespoons raisins (optional)
1 teaspoon sugar
2 teaspoons roasted poppy seeds (khus khus)
For the Chutney
½ katori roasted peanuts
½ katori freshly grated coconut
½ katori fresh coriander leaves
2–3 green chilies, crushed
½ teaspoon cumin seeds
½ katori curd
Salt to taste
Sugar to taste
Method
1. Wash the varai and sabudana well. Soak them together for 5–6 hours.
2. Drain the water and grind them with curd, green chilies, and salt to make a smooth batter. Allow it to rest for 30 minutes. Just before making the appe, add a pinch of baking soda or Eno and mix gently.
3. For the stuffing, heat ghee in a pan. Add cumin seeds and let them splutter. Add the crushed green chilies, followed by the grated coconut. Mix in the sugar, roasted poppy seeds, cashew nuts, and raisins. Cook for 1–2 minutes and let the stuffing cool.
4. To make the chutney, blend together the roasted peanuts, coconut, coriander, green chilies, cumin seeds, curd, salt, and sugar until smooth.
5. Grease the appe pan. Pour a little batter into each cavity, place a small spoonful of the coconut stuffing in the center, and cover with a little more batter.
6. Cook on low to medium heat until golden on one side. Flip and cook the other side until crisp and evenly cooked.
7. Serve the hot stuffed appe with the fresh peanut-coconut chutney.
