TIGRES 🦪 Mejillones Rellenos Crujientes y Cremosos | De Tapas por España

En este nuevo episodio de “De Tapas por España” preparamos unos deliciosos Tigres: mejillones rellenos, cremosos por dentro y súper crujientes por fuera.
Para potenciar todavía más el sabor del mar, yo utilizo mejillones ya cocidos y aprovecho parte de su propio caldo, que aromatizo con laurel y vino blanco seco. Después preparo un relleno cremoso con bacon ahumado y cebolleta, rellenamos las conchas, rebozamos y freímos hasta conseguir ese irresistible color dorado. 🤤🔥
🛒 INGREDIENTES — Para unos 8–10 Tigres
Para los Tigres:
1 kg (2.2 lb) de mejillones cocidos
Un poco del líquido/caldo de los mejillones
2 hojas de laurel
50 ml (3 tbsp + 1 tsp) de vino blanco seco
100 g (3.5 oz) de bacon ahumado
3 cebolletas (green onions/scallions)
30 g (2 tbsp) de mantequilla
30 g (¼ cup) de harina de trigo
250 ml (1 cup) de leche entera caliente
Sal al gusto
Pimienta negra molida al gusto
💡 Alternativas: si no quieres utilizar bacon ahumado, puedes sustituirlo por panceta, bacon sin ahumar, jamón serrano o prosciutto. En lugar de cebolleta también puedes utilizar cebolla, chalota o ajos tiernos, según el sabor que prefieras.
PARA EL REBOZADO:
2 huevos
Pan rallado, cantidad necesaria
Aceite de girasol o aceite vegetal para freír

Spanish TIGRES 🦪 Crispy Stuffed Mussels with Creamy Filling | Tapas Across Spain.
🦪 Today we're continuing our journey through Spain, one tapa at a time! 🇪🇸
In this new episode of “De Tapas por España” (Tapas Across Spain), we're making delicious Tigres — Spanish stuffed mussels with an incredibly creamy filling and a golden, crispy coating.
I use pre-cooked mussels and save some of their liquid, which I infuse with bay leaves and dry white wine for even more seafood flavor. Then we prepare a creamy filling with smoked bacon and scallions, fill the mussel shells, bread them and fry them until beautifully golden and crispy. 🤤🔥
🛒 INGREDIENTS — Makes approximately 8–10 Tigres
For the Tigres:
1 kg (2.2 lb) cooked mussels
A little of the liquid/broth from the cooked mussels
2 bay leaves
50 ml (3 tbsp + 1 tsp) dry white wine
100 g (3.5 oz) smoked bacon
3 scallions / green onions
30 g (2 tbsp) butter
30 g (¼ cup) all-purpose flour
250 ml (1 cup) warm whole milk
Salt to taste
Ground black pepper to taste
💡 Substitutions: Instead of smoked bacon, you can use pancetta, unsmoked bacon, Serrano ham or prosciutto. You can also replace the scallions with onion, shallots or young/green garlic, depending on the flavor you prefer.
FOR THE BREADING:
2 eggs
Breadcrumbs, as needed
Sunflower or vegetable oil for frying
