Hello Guys, Welcome to "Perpetual's Kitchen". Today, we’re making a delicious and flavorful Shimla Mirch Pyaaz Ki Sabzi 🫑🧅 - a simple yet incredibly tasty Indian vegetable curry made with green capsicums, onion petals, aromatic spices & a creamy yogurt-based masala. The capsicum and onion are lightly fried first and then cooked in a rich, flavorful gravy, giving this sabzi a wonderful dhaba-style taste. It’s perfect to enjoy with roti, chapati, naan, paratha or rice.😋 If you enjoy simple homemade Indian recipes with delicious flavors, do give this recipe a try! 🥘 Ingredients:- 2 tbsp mustard oil 1 onion, cut into large petals 2 green capsicums, cut into large petals ½ tsp cumin seeds ½ tsp fennel seeds ½ tsp mustard seeds 1 finely chopped onion 1 tbsp ginger-garlic paste 1 tbsp gram flour 2 grated tomatoes 1 finely chopped green chilli ½ cup yogurt ½ tsp turmeric powder 1 tsp Kashmiri red chilli powder 1½ tbsp coriander powder ½ tsp garam masala Salt, to taste 1 tsp kasuri methi 2 tsp chopped coriander leaves 1 cup water Fresh coriander leaves for garnish 🧅🫑 TO FRY ONION & CAPSICUM PETALS:- Heat 2 tbsp of mustard oil in a kadai. Once the oil is hot, add 1 onion, cut into large petals, and 2 green capsicums, cut into large petals. Stir & fry for 3–4 minutes on medium flame. Remove the fried onion and capsicum petals and keep aside for further use. 🥣 FOR YOGURT MIXTURE:- In a bowl, whisk ½ cup yogurt. Add ½ tsp turmeric powder, 1 tsp Kashmiri red chilli powder, 1½ tbsp coriander powder & ½ tsp garam masala. Mix well. Our Yogurt Mixture is ready. 👨‍🍳 METHOD OF COOKING:- Add 1 tbsp of oil to the same kadai. Once the oil is hot, add ½ tsp cumin seeds, ½ tsp fennel seeds & ½ tsp mustard seeds. Stir & cook. Add 1 finely chopped onion and stir & cook until the onion turns light brown. Add 1 tbsp ginger-garlic paste and stir & cook for 1–2 minutes. Add 1 tbsp of gram flour, mix well & cook. Add 2 grated tomatoes and 1 finely chopped green chilli. Mix well & cook. Add the yogurt mixture to the kadai and mix well, stirring continuously. Add ½ cup water to the yogurt bowl, rinse the bowl well, and pour the water into the kadai. Stir well. Cover & cook on medium heat for 5 minutes. Open the lid after 5 minutes and mix well. Add 1 tsp salt, 1 tsp kasuri methi & 2 tsp chopped coriander leaves. Mix well. Add 1 cup of water and stir well. Cover & cook on medium heat for 5 minutes, stirring occasionally. Add the fried onion & Shimla Mirch petals and mix well. Cover & cook on medium heat for 5 minutes, stirring occasionally. Add 1 tsp freshly chopped coriander leaves and mix well. Garnish with freshly chopped coriander leaves.
