Father’s Day Namoura with Ashta | نمورة بالقشطة | Lebanese Semolina Dessert

Celebrate Father’s Day with this beautiful homemade Namoura with Ashta (نمورة بالقشطة) — layers of golden semolina filled with creamy ashta and soaked in fragrant orange blossom syrup. 🌸
NAMOURA
• 1 cup coarse semolina
• 1 cup fine semolina
• ½ cup sugar
• ½ cup mixture of melted ghee and vegetable oil
• ½ cup Greek yogurt
• 1 tbsp baking powder
ASHTA
• 1 litre milk
• ½ cup semolina
• ½ cup cornflour
• ¼ cup sugar
ATTAR – SUGAR SYRUP
• 1 mug sugar
• ½ mug water
• Squeeze of lemon juice
• 1 tbsp orange blossom water
METHOD
Mix the semolina, sugar and baking powder. Add the ghee/oil mixture and Greek yogurt. Divide into two equal portions.
Line a springform pan with baking paper. Spread the first half in the pan and bake at 180°C for about 10–15 minutes, until lightly golden around the edges.
For the ashta, mix the cold milk, semolina, cornflour and sugar until smooth. Cook while stirring continuously until thick and creamy.
Pour the hot ashta over the first baked layer. Let it settle for about 10 minutes. Flatten small, thin pieces of the remaining namoura mixture between your hands and gently cover the ashta.
Bake for another 20–25 minutes, until beautifully golden.
For the attar, combine sugar, water and lemon juice over gentle heat without stirring. Once bubbling, stir gently, add the orange blossom water and boil for about 5 minutes.
Pour the hot attar over the hot namoura as soon as it comes out of the oven.
Allow to cool, then refrigerate for at least 2–3 hours, or preferably overnight.
Decorate with pistachios and edible flowers and serve with Lebanese coffee. ☕🌸
