Fall-Apart Instant Pot Pot Roast | Seasoned Like Prime Rib (Low-Carb)

Fall-apart tender pot roast made in an 8-quart Instant Pot - seasoned like a prime rib, low-carb friendly, and easy enough for anyone. No knife needed! WHAT YOU'LL NEED Boneless shoulder roast (mine was 2 3/4 lb) - a chuck roast works too Ground thyme Longhorn grill seasoning Garlic powder Onion powder Rosemary Olive oil (for searing) 1 can beef broth + a little water HOW I MAKE IT 1. Pierce the roast all over and season both sides well. 2. Set the Instant Pot to Saute, add a little olive oil, and let it heat up. 3. Sear the roast on both sides until browned, then set it aside. 4. Turn the pot off, pour in the beef broth and a little water, and scrape up all the browned bits from the bottom - that's where the flavor is. 5. Put the roast back in, lock the lid, and Pressure Cook on HIGH for 1 hour 25 minutes. 6. When it beeps, turn it off and wait for the little silver pin to drop before you open the lid. 7. Lift it out with tongs - it falls apart! CARBS: The roast itself has 0 carbs. My side of corn: the whole package was 17 grams of carbs, split between 2 servings - about 8.5 grams each.
