The hidden history of cheese: how spoiled milk became money, military rations and a food a bank will lend against. This food history documentary follows cheese from Neolithic strainer pots and a 3,600-year-old lump found on a mummy to Roman legions, monastery caves, the Kraft tin, and the artisan revival.
There is a bank in northern Italy whose vault holds no gold — just hundreds of thousands of wheels of Parmigiano Reggiano, aging under guard while farmers borrow against them. This deep-dive documentary explains how an accident with milk turned into a food that moves more than 22 million tons a year and has served as payment, ration, tax and treasure for roughly seven thousand years. We start with the problem cheese solved: milk is the densest nutrition available and it spoils in hours. Then the loophole — because nearly every adult alive in the Neolithic was lactose intolerant, and draining the whey took most of the lactose with it. Cheese came first; the biology followed. We follow the evidence through perforated Polish strainer pots, Sumerian ration tablets, a jar sealed in an Egyptian tomb, and lumps of kefir-style cheese scattered on Bronze Age mummies in the Taklamakan. From Homer's Cyclops running a working dairy to Roman legions carrying hard wheels across Gaul, from Benedictine monks perfecting Roquefort and Parmigiano in cave cellars to medieval tenants paying rent in wheels, cheese kept turning into currency. Then the industrial turn: the first cheese factory in 1851, Pasteur, James Kraft's tin, the government cheese caves of the 1980s — and the American creameries that went back to the old methods and started winning world championships. 🧀
