Soft, fluffy pancakes with peach sauce or golden French toast served with caramelized figs, cream, almonds, and banana? Two delicious breakfast ideas to make your morning special 🥞 1. Easy Fluffy Pancakes Ingredients 2 cups (250 g) all-purpose flour 2 cups (480 ml) milk 2 eggs 4 tbsp sugar 4 tbsp vegetable oil or melted butter 4 tsp baking powder 1 tsp vanilla extract ½ tsp salt Method Mix the flour, baking powder, sugar, and salt in a bowl. In a separate bowl, combine the eggs, milk, oil or melted butter, and vanilla. Add the wet ingredients to the dry ingredients and mix gently until just combined. Pour the batter into a lightly greased, preheated pan. When bubbles appear on the surface, flip and cook until golden on both sides Peach Sauce Cook chopped peaches with a little sugar and hot water until soft and slightly thickened. Add a little lemon juice, stir, and let cool slightly before serving 🍞 2. Fig & Cream French Toast Ingredients 2 eggs ½ cup milk 1 tbsp sugar ½ tsp cinnamon A little lemon zest Bread slices 15 g butter Cream A little milk to thin the cream Figs Almonds and banana for topping Method Whisk the eggs, then add the milk, sugar, cinnamon, and lemon zest. Dip the bread slices into the mixture until fully coated. Heat a little butter and oil in a pan over medium heat and cook the bread for 2–3 minutes on each side until golden Whisk the cream with a little milk until smooth and creamy. Toast the almonds until golden. Sauté the figs with butter and sugar until soft and caramelized. Add a little boiling water and cinnamon if desired. Stir in the cream sauce and cook until slightly thickened.
