Welcome to another peaceful autumn day in Cyprus. 🍂 Today, I'm sharing the simple joys of slow living, traditional Cypriot food, and peaceful moments in our Mediterranean garden. I'm baking a traditional Cypriot halloumi cake with fresh and aged halloumi, preparing a lovely plate of çakıstes (Cypriot cracked green olives), and spending time caring for our little garden. I'm also creating a handmade hanging bird bath using a glass bowl, stones, and seashells, hoping to welcome some feathered visitors. Meanwhile, a little family of birds has made a nest in our lemon tree, and Daisy, our curious little dog, has plenty to say about her new neighbors! 🐦 As the day comes to an end, we enjoy the beautiful colors of the Cyprus sunset. I hope this video brings a little peace and warmth to your day. 🤍 --- 🌿 Traditional Cypriot Halloumi Cake Recipe *Ingredients:* 3 eggs 1 cup plain yogurt ½ cup olive oil ½ cup vegetable oil 2 cups all-purpose flour 1 packet baking powder (about 10 g) 125 g aged halloumi cheese 250 g fresh halloumi cheese ½ bunch fresh coriander (cilantro), finely chopped 3–4 sprigs fresh mint, finely chopped 1 tbsp dried mint A pinch of black pepper Salt, only if needed *For the topping:* Sesame seeds Nigella seeds (black cumin seeds) Fresh rosemary sprigs *Instructions:* 1. Preheat the oven to 180°C (350°F). 2. In a large bowl, whisk the eggs until combined. 3. Add the yogurt, olive oil, and vegetable oil. Mix well. 4. Add the flour and baking powder, stirring until you have a smooth batter. 5. Fold in the diced aged and fresh halloumi, fresh coriander, mint, and black pepper. 6. Pour the mixture into a greased baking dish and smooth the surface. 7. Sprinkle with sesame seeds and nigella seeds, then decorate with fresh rosemary. 8. Bake for approximately 40–45 minutes, or until golden brown and a skewer inserted into the cake comes out without wet batter. 9. Allow to cool slightly before slicing. *A little tip:* Using both aged and fresh halloumi gives this traditional Cypriot cake a wonderful balance of rich flavor and soft texture. --- Thank you for spending these quiet moments with me. 🤍 If you enjoy slow living, traditional Cypriot recipes, gardening, and peaceful days at home, please give this video a like and subscribe for more slow days in Cyprus.
