Have you ever tried Ridge Gourd Chutney that tastes so delicious with rice, roti, or khichdi? 😍🔥
Today, I’m making a simple and flavorful Ridge Gourd Chutney using 300 grams of fresh ridge gourd.
The best part is that we do not peel the ridge gourd. The peel also contains fiber and nutrients.
We roast peanuts, coriander seeds, sesame seeds, green chilies, and curry leaves to make a flavorful masala. You can also add 3–4 garlic cloves if you like. Garlic is completely optional.
Then we cook the ridge gourd with tomatoes, grind everything together, and finish it with a delicious tempering. 🌶️🌿
This chutney tastes amazing with hot rice, roti, and khichdi! 😋
🥒 Ingredients
Ridge Gourd – 300 g
Tomatoes – 2 large
Peanuts – 2 tbsp
Coriander Seeds – 2 tbsp
Sesame Seeds – 1 tbsp
Green Chilies – 10–15
Garlic – 3–4 cloves, optional
Curry Leaves
Fresh Coriander
Tamarind – a little, optional
Turmeric – ½ tbsp
Salt – to taste
Oil – as needed
🌶️ For Tempering
Oil – 2 tbsp
Dry Red Chilies – 3
Chana Dal – 1 tbsp
Urad Dal – 1 tbsp
Mustard Seeds
Curry Leaves
A pinch of Hing
👩🍳 How to Make
Wash the ridge gourd well and cut it into small pieces without peeling it.
Heat oil in a pan and roast peanuts, coriander seeds, sesame seeds, green chilies, and curry leaves.
After roasting the red chilies slightly, add 3–4 garlic cloves and fry them well. Garlic is optional, so you can skip it if you don't like garlic.
Cool the roasted mixture and grind it without adding water.
In the same pan, add oil and cook the ridge gourd with a little salt. Cover and cook until soft.
Add chopped tomatoes and cook until they become soft. Add a little tamarind if you like a slightly tangy taste.
Add fresh coriander and let the mixture cool.
Transfer the cooled ridge gourd mixture to a mixer jar. Add the prepared roasted masala, turmeric, and salt to taste.
Do not add water. Grind until smooth.
For the tempering, heat oil and add dry red chilies, chana dal, urad dal, and mustard seeds. Once they splutter and turn lightly golden, add curry leaves and hing.
Add the ground chutney and cook for a few minutes until the extra moisture dries out.
Our delicious Ridge Gourd Chutney is ready! 😋🔥
Serve it with hot rice, roti, or khichdi and enjoy! ❤️
