Today we’re making Indian-style kidney beans , "rajma" from dried beans, and I’m showing you the little things that make all the difference: how to get the beans truly creamy, why you should never throw away the bean broth, how to build a proper onion-tomato masala, and how to avoid ending up with beans that are somehow watery and dry at the same time.
This is the kind of recipe that starts with a simple bag of dried beans and turns into something deeply comforting, rich, and full of flavor.
And if you’re cooking in America, Canada, the UK, or Europe, don’t worry, I’ll show you the practical substitutions too.
WHAT WE’RE MAKING
A pot of soft, creamy kidney beans cooked with aromatics, then finished in a rich Indian masala made with onion, garlic, ginger, tomato, and warm spices.
Serve it with rice, flatbread, toast, or honestly whatever you have.
FOR THE BEANS
1 lb dried kidney beans
water for soaking and cooking
onion
garlic
fresh ginger
bay leaf
cumin
ghee or oil
salt
FOR THE MASALA
ghee or oil
cumin seeds
onion
garlic
fresh ginger
turmeric
ground coriander
ground cumin
chili powder
tomato purée or canned tomatoes
reserved bean broth
garam masala
fresh cilantro
lemon
THE IMPORTANT PART
A few things I want you to remember:
1. Do not throw away the bean broth.
That dark cooking liquid is full of starch and bean flavor. It helps thicken the masala and makes the finished beans taste much richer than plain water ever will.
2. Cook the onion properly.
You want it deeply softened and golden before the tomato goes in. This is where a lot of the flavor begins.
3. Reduce the tomato.
If the tomato still looks watery and raw, the masala is not ready. Cook it until it becomes thicker, darker, and more concentrated.
4. Mash a few beans.
You do not need cream to make rajma creamy. Mash a few beans into the sauce and let their starch do the work.
5. Save the lemon for the end.
Acidity brightens the final dish, but adding acidic ingredients too early can interfere with dried beans softening properly.
TROUBLESHOOTING
Beans still hard?
They probably need more time. Older dried beans can take much longer to soften.
Masala tastes flat?
Check the salt before adding more spice.
Too watery?
Simmer uncovered and mash a few beans into the sauce.
Too thick?
Add some of that reserved bean broth.
Tomato tastes sharp or raw?
It simply needs to cook longer.
WHAT TO DO WITH LEFTOVERS
This is one of those recipes I actually like making in a big batch because the beans are useful all week.
You can use them:
over rice
inside wraps
on toast
with flatbread
as a quick soup base
mashed into patties
or simply reheated as they are
The flavor usually gets even better the next day.
FREEZER TIP
Let the beans cool completely, then freeze them in smaller portions with enough sauce or broth to keep them moist.
