In this video, I’m testing out if same day artisan sourdough bread needs to be cold proofed at all. I always cold proofed it for 2 hours. But I always wondered, what if I didn’t cold proof it and just left it on the counter for an hour in the banneton. 🤔 You could see, if you watched the whole video, that it absolutely worked! This test was only for a same day loaf which has 150 grams of active starter. My starter for this loaf was a little iffy, it didn’t rise as much as I would’ve liked, probably because it was chilly in my house, but I used it anyway. It goes to show, as long as your starter is strong, your loaf will mostly likely turn out. So, is cold proofing really necessary for sourdough bread? Based on this bake, not always! If you've been wondering whether you can make delicious artisan sourdough bread in one day without putting it in the refrigerator overnight, this video is for you. This loaf was ready in time for dinner. Recipe: Ingredients: 150 grams strong active starter 350 grams barely warm water 2 teaspoons salt 500 grams all-purpose flour (or bread flour) Directions: 1. Mix starter, water, and salt (starter will not fully dissolve and that's ok) 2. Add flour and mix until no dry bits of flour remain. 3. Cover and let it rest for 30 minutes. 4. After 30 minutes, do your first set of stretch and folds. Cover and let rest again for 30 more minutes. You will do 4 sets of stretch and folds. (This will take 2 hours total) 5. After all sets of stretch and fold are completed, cover your container of dough with a towel and set it aside on the counter for 4 hours. 6. After 4 hours, remove your dough from the container and shape it. Place it into a banneton or bowl of choice and cover it with plastic wrap and leave it on the counter for 1-2 hours. You want to see some rise in your dough. 7. If using a Dutch oven to bake your bread, you will need to preheat your Dutch oven for 30 minutes at 450 degrees Fahrenheit. You will want to do that while your bread proofing in the banneton. 8. Once the hour (or 2) has passed and oven is preheated, bake your bread. You can either score it before placing it in the oven or be like me and place it in the oven then take it out after 7 minutes, score it, then put it back it. I feel like it gives it a better rise. 9. I like to bake mine covered the entire time at 450 degrees for 35-40 minutes. 10. TA-DA! You have made your same day sourdough bread! Congratulations! Now it's time to devour it!
