Curry goat is the pot that comes out for every wedding and every birthday that ends in a zero, and it is not a difficult meat. It is a lean meat with a lot of bone and very little fat, and once you cook it that way the tough, powdery, strong-smelling curry goat is gone for good. Come, let me show you.
In this video:
1. Goat is not lamb: why lean meat needs time and gentleness
2. Bone in, and chopped small
3. The strong smell is mostly in the fat (and what the lime really does)
4. Curry it twice: in the overnight seasoning and in the pot
5. Burn the curry, then let the goat fry in it
6. Water a little at a time, and the smallest bubble (stove and pressure cooker times)
7. The wedding pot, and how it gets safely into the fridge
Goat does not need to be tamed. It needs to be given time.
Tell me in the comments whether your family serves curry goat with white rice or with rice and peas.
Mind how you go, and walk good.
