In today’s video I’m sharing 5 delicious family meal ideas that we’ve been enjoying as a family of nine. These are simple, filling dinners using everyday ingredients, including homemade burgers, keema fajitas, comforting curries and a creamy chicken tikka masala. I hope this gives you a little inspiration if you’re wondering what to cook for the family this week! ❤️ 🍔 Homemade Lamb Burgers Ingredients: 1kg lamb mince 1 onion 1 tomato 1 green chilli 1 tbsp garlic & ginger paste 1 tsp salt 1 tsp red chilli flakes 1 tsp garam masala 1 tsp pomegranate seeds 1 tbsp lemon juice ½ cup plain flour 1 egg Method: Finely chop the onion, tomato and chilli. Add everything to a large bowl and mix thoroughly. Shape into burger patties and either shallow fry, deep fry or bake until completely cooked through. Serve in burger buns with cheese, salad and your favourite sauces. We had ours with chips. 🍛 Mutton, Spinach & Mixed Bean Curry Ingredients: 1kg mutton 2 onions, sliced 3 tomatoes, sliced 3 tbsp sunflower oil 1 tsp coriander seeds 1 tsp cumin seeds 4 cloves 1 tbsp garlic & ginger paste ½ tbsp salt ½ tbsp garam masala ½ tbsp ground cumin ½ tbsp ground coriander ½ tsp ground turmeric ½ tsp red chilli powder 240g baby spinach 1 x 395g tin taco mixed beans in tomato sauce 500ml water Method: Heat the oil and lightly roast the whole spices. Add the onions and cook until browned, followed by the tomatoes. Cook until the tomatoes are soft and the oil begins to separate. Stir in the garlic & ginger paste, salt and powdered spices. Add the mutton and cook over a medium-high heat for around 5 minutes. Add the spinach, mixed beans and water. Bring to the boil, cover and simmer for around 45 minutes or until the mutton is tender. We served ours with boiled rice. 🌯 Keema Fajitas Ingredients: 1kg lamb mince ½ red bell pepper ½ green bell pepper ½ yellow bell pepper 1 red onion 1 tsp salt 1 tsp paprika 1 tsp cayenne pepper 1 tsp mixed herbs 1 tbsp garlic & ginger paste 1 x 400g tin peeled plum tomatoes Tortilla wraps Lemon juice Grated cheese, to serve Method: Cook the lamb mince in a large pan until browned. Add the plum tomatoes, garlic & ginger paste and seasonings and mix well. Slice the peppers and red onion, add them to the mince and cook briefly so that the vegetables soften while retaining a little bite. Finish with a squeeze of lemon juice. Spoon into tortilla wraps, add grated cheese and fold. 🍗 Grilled Chicken with Aloo, Spinach & Bean Curry For the chicken, I used ready-marinated tandoori chicken portions and cooked them in the oven. For the curry: 1kg potatoes 240g baby spinach 1 x 395g tin taco mixed beans 2 onions, sliced 2 tbsp sunflower oil 1 tsp salt 1 tsp garam masala 1 tsp ground cumin 1 tsp ground turmeric ½ tsp red chilli powder 1 tsp garlic granules 1 tsp cumin seeds 1 bay leaf 200ml water Method: Heat the oil and add the cumin seeds and bay leaf, followed by the sliced onions. Cook until softened and browned. Add the seasonings and potatoes and coat them well in the mixture. Add the spinach, mixed beans and water. Bring to the boil, cover and simmer for approximately 20 minutes, or until the potatoes are tender. Serve alongside the grilled tandoori chicken and rice. 🍛 Creamy Chicken Tikka Masala Ingredients: For the chicken & marinade: 1kg boneless chicken thigh pieces ½ cup low-fat Greek yoghurt 1 tsp salt 2 tbsp tandoori masala 1 tsp paprika 1 tsp ground turmeric 1 tsp garam masala 1 tbsp garlic & ginger paste 1 tsp red chilli powder 1 tbsp lemon juice 3 tbsp sunflower oil For the sauce: 1 tbsp sunflower oil 1 large onion, sliced 200g passata 150ml double cream Fresh coriander, optional Method: Combine all the marinade ingredients in a bowl. Add the chicken and coat thoroughly. Leave to marinate for at least 30 minutes. Heat the oil in a large pan and cook the onion until softened. Add the marinated chicken and cook for around 10 minutes, stirring regularly. Pour in the passata and double cream. Mix well, bring to the boil and continue cooking until the chicken is completely cooked through and the sauce is rich and creamy. Garnish with fresh coriander and serve with rice. I really hope these recipes give you some inspiration for your own family dinners. Let me know which one you’d choose! 😊 #FamilyMeals #DinnerIdeas #FamilyRecipes #EasyDinners #ChickenTikkaMasala
