Cheesy Chicken & Mashed Potato Bake. If you have potatoes and chicken, here’s a dinner idea: creamy mashed potatoes on the bottom, chicken with peppers and onion in the middle, and mozzarella on top. Ingredients Mashed potato base: potatoes — 500 g | 17.6 oz, peeled and boiled in salted water garlic — 1 clove black pepper heavy cream — 2–3 tbsp Chicken filling: chicken breast — boneless, skinless red and green bell peppers onion olive oil garlic — 2 cloves salt — a pinch black pepper paprika Italian seasoning — sprinkles tomato sauce Topping: mozzarella — as desired parsley — optional Steps 1. Peel the potatoes, cut into chunks and boil in salted water. Slice the peppers, chop the onion and dice the chicken. 2. Cook the chicken in olive oil with the onion, 2 cloves of garlic, a pinch of salt, black pepper, paprika and peppers. Stir to coat, cover and cook. Add sprinkles of Italian seasoning. 3. Drain the potatoes. Add 1 clove of garlic, black pepper and 2–3 tbsp of heavy cream, then blend until smooth. 4. Spread the mashed potatoes in the dish, add the chicken filling on top and finish with mozzarella as desired. 5. Bake at 190°C / 375°F for 15 minutes. Chop the optional parsley, garnish, slice and serve.
