A woman in Holmes County has kept the same jar of yeast alive since 1952—seventy-one years of bread, from one potato. Cornell University confirmed in 2017 that Amish hop-potato starters remain viable for over sixty years without refrigeration, producing lactic acid bacteria that makes the bread digestible even for people with gluten sensitivity. Before 1868, every loaf baked in America came from a living starter, not a packet.
The Fleischmann Yeast Company, now part of Associated British Foods with $21.8 billion in annual revenue, launched a nationwide campaign in the 1940s calling homemade starters "unreliable" and "dirty."
