One Pan of Potatoes for All the Homeless — Life Here Is Hard

Fried potatoes over a barrel fire at a homeless camp by the dump — Lena is cooking for everyone today, with no lighter, a broken pan lid, and meat pulled from a fridge that hasn't had power in years. A new day at the camp starts the way it always does — with the fire barrel. Before anything can burn, the old ash and coal have to come out, and since Lena is in charge of cooking today, she scrapes it clean. Just past the trees, construction trucks rumble in with a fresh load for the landfill next door. Sasha sharpens the knives, Sergey clears the path of a surprise left by the local dog, then folds up the tent he slept in — a whole home that fits into one simple bag. Yulia, the camp's comedian, shows off hands blackened from work and says hello to everyone watching. Then comes the fridge without electricity. Yulia pulls out meat found at the dump — nobody knows when it expired. For the people who live here, that's not a reason to throw food away. The lighters have run out, so the fire gets lit with matches and a piece of foam rubber, and the wind makes it a fight. Once it catches, fat melts in the pan and Lena drops the big, good-looking potatoes in by hand — one of them, if you look closely, never got cut. The lid loses its handle halfway through, so stirring means lifting hot metal with bare hands. Lena chops onion as finely as she can, salts the pan, and keeps stirring as the fire burns hot.
