this taiwanese bamboo shoot soup is the first thing I eat every time I visit taiwan, oftentimes ordered for delivery straight to my hotel room. it's light yet flavorful, and full of crisp bamboo and fall-off-the-bone pork ribs. I'll show you an easy way to peel and cut fresh bamboo shoots, and my 3 chef tips for a crystal-clear broth. 📝 printable recipes: tek-sún thng or zhúsǔn tāng (竹筍湯) – bamboo shoot soup: https://thesoundofcooking.com/bamboo-... pair it with stir-fried water spinach:    • Stir-Fried Morning Glory | Taiwanese Water...   — subscribe    / thesoundofcooking   cozy cooking exploring nostalgic flavors — where i'm reimagining the recipes my dad never got to teach me 🍜subscribe for nourishing, umami-rich, taiwanese and east asian recipes, calming cooking vlogs, food stories, and peaceful cooking to help you find stillness. 💛 if this resonated with you, it would mean so much if you liked it or shared it with someone who might enjoy it too. timestamps: 0:00 – intro 0:15 – clear broth tip 1 0:33 – tip on washing bamboo shoots 0:39 – parboiled pork ribs 0:47 – clear broth tip 2 0:58 – bamboo peeling tips 1:34 – bamboo prep tips - how to cut bamboo shoots for this soup 1:56 – tip for crisp bamboo 2:08 – another bamboo prep tip 2:32 – cooking the soup 2:43 – for extra umami (optional) 2:59 – clear broth tip 3 3:05 – seasoning pro tips 3:15 – thoughts? 3:17 – what to serve this soup with 🍲 cozy taiwanese bamboo shoot soup (tek-sún thng or 竹筍排骨湯) ingredients (4-6 servings, 2 ½ cups to 3 ¾ cups each) ▹ 1 pound bone-in pork spare ribs, cut into individual ribs or buy already cut pieces (see note) ▹ 3 ½ quarts cold water, divided ▹ 2 ½ pound fresh bamboo shoot, Taiwan or ‘ma bamboo’ preferred (麻竹筍), peeled, about 1 ½ pounds after peeling (substitute with ‘green bamboo shoot’ - see note) ▹ 1-inch piece ginger, thinly sliced at an angle ▹ 2 tablespoons michiu (Taiwanese rice cooking wine), optional ▹ ½ teaspoon Diamond Crystal kosher salt, or 1 teaspoon if not using michiu, ✴️ use half the amount if using sea salt or table salt ▹ 1 light sprinkle ground white pepper, less than ⅛ teaspoon, optional ▹ msg, optional notes bamboo shoots – I prefer ma bamboo (麻竹筍) aka ‘sweet bamboo’ or ‘Taiwan bamboo shoot’ for this recipe because they’re bigger, have less bitterness when raw, and require less prep for the same amount of bamboo. Luckily, it’s available to order online from Weee! when it’s in season between April and November. You can also use 綠竹筍 (lǜ zhúsǔn) aka green bamboo or 孟宗筍 (mèngzōng sǔn) aka winter bamboo, which is sometimes labeled as ‘bamboo shoot’ or ‘fresh bamboo.’ I’ve tested this recipe with all three types. Green bamboo and winter bamboo will require an extra prep step though – see the full recipe at https://thesoundofcooking.com/bamboo-... more cozy cooking videos: lunar new year cake with a crispy edges –    • Stop Pan-Frying Lunar New Year Cake WithOU...   taiwanese bitter melon soup (2 ways) –    • Bitter Melon Soup with Pork Ribs 2 ways ▹ ...   say hello: ▹ subscribe to tsoc channel to keep in touch:    / thesoundofcooking   ▹ instagram:   / thesoundofcooking   ▹ follow on tiktok:   / thesoundofcooking   ▹ for printable asian recipes, visit: https://thesoundofcooking.com thanks for being here. :) lets eat~ chef product links: dutch oven i used in this video – https://geni.us/605ySEg carbon steel clever (size #4) – https://wokshop.com/shop/product/carb... diamond crystal kosher salt – https://geni.us/uDPd cutting board – https://geni.us/H75PMm chef kitchen side towels – https://geni.us/C6wlH video gear i use: sony fx30 – https://geni.us/1JQmd1c lens (18-50mm 2.8) – https://geni.us/gjS1J variable nd – https://geni.us/DJqPEx pro-mist-filter – https://geni.us/IddVT extra sony battery and charger – https://geni.us/3JQit The Sound of Cooking® (dba of Ouen Studios, LLC) is a participant in the Amazon Services LLC Associates Program, an affiliate advertising program designed to provide a means for sites to earn advertising fees by advertising and linking to Amazon.com. credits: created by cindy chou © 2026 The Sound of Cooking® – keywords for context: taiwanese soup, bamboo shoot soup, cozy cooking, taiwanese recipe, east asian recipe, cozy aesthetic #bambooshootsoup #taiwanese #cozycooking Copyright 2026 Ouen Studios LLC DBA The Sound of Cooking®.
