One big chicken Parmesan, baked until the edges are crisp and the mozzarella is bubbling. Cut it into squares and bring the whole tray to the table. I’m making one large chicken cutlet from minced chicken, coating it with Parmesan breadcrumbs, then finishing it with a little thick tomato sauce and cheese. Huge thanks for the support ❤️ If my cooking style works for you, I’ve got a second channel you might enjoy too: 👉    / @notanothercurryshowsamebutdiff   Serves: 4–6 · Prep: 15 minutes · Cook: 30–35 minutes Tray 23 × 28 cm (9 × 11 in) Ingredients • 800 g (1 lb 10 oz) chicken mince, preferably including thigh meat • 1 large egg • 60 g panko breadcrumbs (about 1 UK cup or 1¼ US cups), plus 30 g (about ½ UK cup or ⅔ US cup) for the top • 60 g finely grated Parmesan (about 1 UK cup or 1 US cup), divided • 2 garlic cloves, finely grated • 1 tsp dried oregano • 1 tsp fine salt and ½ tsp black pepper • 2 tbsp olive oil, divided • 250 ml thick marinara sauce (1 UK cup or approximately 1 US cup plus 1 tbsp) • 200 g grated low-moisture mozzarella (about 1⅔ UK cups or 1¾ US cups) • Fresh basil or parsley to finish Oven to 220°C/425°F (200°C fan) Bake for 20–25 minutes, until browned at the edges and the centre reaches 74°C/165°F.
