Crisp, golden tortilla pockets packed with richly spiced keema. Brushed with ghee and baked in the oven—no pastry to make and no frying the pockets. I cook the mince with onion, garlic, ginger and warming spices, then fold it into tortilla wraps and bake until golden. Keeping the filling free of loose sauce helps the outside crisp while the meat stays moist. These make a lovely lunch, snack or easy dinner with a salad.
