Crispy Italian chicken thighs baked over rich tomato rice with roasted peppers, spinach and melted mozzarella.
This complete family dinner cooks together in one tray with very little washing-up.
The chicken roasts above the rice, keeping the skin beautifully golden while its juices flavour everything underneath. Tomatoes, garlic, Italian herbs and peppers give the rice plenty of flavour, with spinach and a restrained mozzarella finish bringing the whole dish together.
It is simple, filling and made with familiar ingredients—exactly the sort of comforting dinner that works on any night of the week.

Ingredients
Chicken
• 6 large skin-on, bone-in chicken thighs, about 1.2 kg
• 1 tbsp olive oil — 15 ml
• 1 tsp dried oregano
• 1 tsp smoked paprika
• 1 tsp fine salt
• ½ tsp black pepper
Tomato rice
• 300 g long-grain rice — 1½ UK cups or 1½ US cups
• 1 medium onion, diced — 150g 1 UK cup or 1 US cup
• 2 red peppers, cut into strips
• 4 garlic cloves, finely chopped
• 2 tbsp tomato purée/paste
• 1 × 400 g tin chopped tomatoes
• 450 ml hot chicken stock — 1¾ UK cups or 1⅞ US cups
• 1 tsp dried basil
• ½ tsp dried oregano
• ½ tsp fine salt
• ¼ tsp black pepper
• 100 g baby spinach — 3½ packed UK cups or 4 packed US cups
• 125 g mozzarella, grated — 1¼ UK cups or 1 US cup
• 25 g Parmesan, finely grated — ¼ UK cup or ¼ US cup
• 1 tbsp chopped fresh parsley or basil — about 4 g
Heat the oven to 220°C/200°C fan/425°F.
Roast uncovered for 20 minutes
Reduce the oven to 190°C/170°C fan/375°F.
Cover Bake for 30 minutes.
Bake uncovered for another 10–15 minutes
Bake for another 5–8 minutes
