Step-by-step cooking method
Step 1: Soak the chana dal
1. Wash chana dal thoroughly 2–3 times.
2. Soak it in water for approximately 1–2 hours.
3. Drain the excess water before cooking.
Step 2: Boil the dal
1. Add soaked chana dal to a pressure cooker.
2. Add 3 cups of water.
3. Add turmeric, salt, chopped ginger, green chilli and tomato.
4. Pressure cook for approximately 4–5 whistles on medium heat, then check the texture.
5. The dal should be soft and cooked but the grains should retain their shape.
Cooking time may vary depending on the dal and pressure cooker. Add water if required.
Step 3: Prepare the masala
1. Heat oil or ghee in a kadhai.
2. Add cumin seeds and hing.
3. Add chopped garlic and ginger. Fry until aromatic.
4. Add finely chopped onions and cook until golden brown.
5. Add green chillies and chopped tomatoes.
6. Cook until tomatoes become soft and the masala releases oil.
7. Add turmeric powder, coriander powder, red chilli powder and cumin powder.
8. Mix everything well and cook for 2–3 minutes.
Step 4: Combine dal and masala
1. Add the boiled chana dal to the prepared masala.
2. Mix gently so that the masala combines evenly.
3. Add water according to your preferred consistency.
4. Add garam masala and salt if required.
5. Simmer on low flame for 8–10 minutes.
6. Add crushed kasuri methi and fresh coriander leaves.
Step 5: Prepare the special tadka
This is the most important step for giving the dal a delicious dhaba-style flavour!
1. Heat 1 tablespoon ghee in a small tadka pan.
2. Add cumin seeds and let them crackle.
3. Add sliced garlic and fry until golden.
4. Add dry red chillies.
5. Turn off the flame and add Kashmiri red chilli powder.
6. Immediately pour this hot tadka over the prepared chana dal.
Step 6: Final presentation
Garnish with fresh coriander leaves.
