3. **Espagnole Sauce**:
**Ingredients**: Brown stock (beef or veal), mirepoix (onions, carrots, celery), tomato paste, brown roux.
**Method**: Mirepoix and tomato paste are sautéed, brown roux is added, then simmered with brown stock until reduced.
**Derivatives**: Bordelaise sauce (with red wine and bone marrow), Chasseur sauce (with mushrooms, shallots, and white wine), Robert sauce (with onions, mustard, and white wine).
4. **Tomato Sauce (Sauce Tomat)**:
**Ingredients**: Tomatoes, mirepoix, sometimes roux or fat.
**Method**: Tomatoes and mirepoix are simmered together until reduced to a thick sauce.
**Derivatives**: Creole sauce (with peppers and spices), Provençale sauce (with garlic and herbs), Spanish sauce (with peppers and onions).
5. **Hollandaise Sauce**:
**Ingredients**: Egg yolks, butter, lemon juice, salt, cayenne pepper.
**Method**: Egg yolks are whisked over low heat or in a double boiler, then clarified butter is slowly incorporated to form an emulsion.
**Derivatives**: Béarnaise sauce (with tarragon and shallots), Mousseline sauce (with whipped cream), Foyot sauce (with meat glaze).
