Khandvi is a popular savory snack from Gujarat and Maharashtra, India, made from a smooth batter of gram flour (besan) and yogurt or buttermilk. They are typically tempered with mustard seeds, curry leaves, and sesame seeds and garnished with grated coconut and coriander, offering a soft, melt-in-the-mouth texture. Khandvi is often enjoyed as an appetizer or snack, served hot or cold, sometimes accompanied by chutneys. INGREDIENTS Khandvi: 3/4 Cup Yogurt/Dahi 3/4 Cup Chickpea Flour/Besan 1/4 Tsp Turmeric/Haldi 2-3 Pinch Dried Ginger Powder 2 Pinch Asafoetida/Hing Salt Tadka: 2-3 Tsp Oil 1 Tsp Mustard Seeds/Raai 1-2 Green Chilli 1 Spring of Curry Leaves/Kadi Patta 1 Tbsp Sesame Seeds/Til Coriander METHOD Mix yogurt, chickpea flour, tumeric, ginger powder, salt and water. Make a smooth batter. ⁠Transfer the batter to a thick bottom pan. ⁠Cook at medium flame stirring continuously for 20 minutes. ⁠Transfer to a greased cake mold or plate. Spread evenly and let it cool down. ⁠Remove from mold and cut into cubes. ⁠Heat oil in a kadhai and add mustard, green chilli, curry leaves and sesame seeds.
