📍Nagaimo Taro Rice | Serves 2
Nagaimo…300g
Soy sauce…1 tablespoon
Mirin…2 teaspoons
Salt…a pinch
📍Peaches Compote in White Wine | 5 peaches
*White wine…350ml
*Water…250ml
*Granulated sugar…180g
*Lemon…1
*Rosemary…2–3 sprigs
*Cardamom…6 pods (lightly crushed) 📝
1. Gently wash the peaches, cut them in half with the skin on, and remove the pits.
2. Place the white wine, water, granulated sugar, and lemon juice in a pot, bring to a simmer, and dissolve the sugar.
3. Add the cardamom and rosemary.
4. Arrange the peaches in the pot, cover with a drop lid, and simmer over low heat for 15–20 minutes.
5. Turn off the heat, let cool slightly, then peel the peaches by pinching the skin off (store in the refrigerator for up to one week).
📍Watermelon Popsicles | Makes 6 popsicles (70ml each)
🍉Red Flesh
*Watermelon…about 300g
*Honey… 2 teaspoons
*Lemon juice… 1 teaspoon
*Chocolate chips… to taste
🤍White Layer
*Yogurt… 60g
*Honey… 2 teaspoons
*Whipping cream… 15ml (optional)
💚Rind Layer
*Green kiwi… 1
*Honey… 1 tsp 📝 Let each layer set for about an hour before adding the next, repeating this process three times
📍Sweet Vinegar Pickled Young Ginger | Serves 4
*Young ginger… 300g
*Salt… 1 tsp
Sweet Vinegar
*Rice vinegar… 200ml
*Water… 100ml
*Sugar… 100g
*Salt… 1 tsp
📝Thinner slices of ginger have less pungency, so a slicer is recommended. Blanch briefly for 2 minutes, then soak in the sweet vinegar mixture with dissolved sugar. It tastes best after about 2 weeks to 1 month.
📍Caramel Popcorn Sauce
*Granulated sugar…100g
*Unsalted butter…40g
*Heavy cream…40ml (room temperature)
*Honey…1 tsp
*Salt…a pinch
*Vanilla extract…a dash 📝
1. Place the granulated sugar in a saucepan and melt it over low heat.
2. Once it turns a deep amber color, reduce the heat, add the butter, and stir to combine.
3. Gradually add the heavy cream. Add the honey and salt, and stir until smooth.
4. Turn off the heat and quickly toss the popcorn in the sauce. Spread them out on parchment paper and bake at 150℃ for about 10–15 minutes.
