Revisiting Sifting with the Fellow Shimmy Coffee Sieve | Coffee with April #223

This week, we're revisiting sifting when brewing filter coffee. Sifting can change the cup profile of brewed coffee quite considerably, and this week we test the Shimmy Coffee Sieve from Fellow. The Shimmy is a simple design intended to help the user remove very fine coffee particles in brewed coffee, specifically those 200µm or below. It is thought that these particles are responsible for undesirable flavours in brewed coffee as well as contributing to a reduction in flow rate due to paper filter clogging.
