How to Make Ube Espasol ✅ Ingredients 4 cups glutinous rice flour 4 cups coconut milk 2 cups sugar 1 teaspoon salt ½ cup ube (purple yam), cooked & mashed 1 teaspoon ube extract ✅ Instructions In a pan over medium heat, toast glutinous rice flour, stirring frequently, for 15-20 minutes or until the color changes to pale gold. Reserve 1 cup for coating. Dust the bottom of a rectangular baking dish with ½ cup toasted flour. Set aside. In another pan over medium heat, combine coconut milk, sugar, and salt. Stir until sugar and salt are dissolved. Add ube (purple yam) and ube extract. Stir until fully incorporated. Bring to a boil. Slowly add the 3 cups of toasted rice flour. Whisk vigorously to prevent lumps. Cook for 30-40 minutes or until very sticky. Transfer to the prepared pan. Using a lightly oiled spatula, spread the mixture evenly. Sprinkle the remaining reserved toasted flour. Cut into desired lengths. Remove from pan, and roll in flour to thoroughly coat. Shake off excess flour. Thanks for watching!
