✨ Puja Special Episode 3 – Special Basanti Pulao ✨ Today I’m sharing a beautiful, aromatic and super delicious Basanti Pulao, made with fragrant Gobindobhog rice. This is the kind of golden, fluffy and flavorful pulao that reminds us of Bengali puja celebrations and traditional অনুষ্ঠান বাড়ির রান্না. 💛 For this recipe, I have used Gobindobhog rice, soaked for about 1 hour. Then I prepared a special homemade Pulao Masala using cardamom, cinnamon, mace, white pepper, nutmeg, whole cumin, bay leaves and a little sugar. The spices are lightly roasted with a little turmeric and then ground into a fine powder. I use about 3–4 tablespoons of this special pulao masala in the recipe. The rice is mixed with ginger paste, turmeric and salt, along with a little ghee, and allowed to rest before cooking. In a hot kadai, I add 3–4 tablespoons of ghee, bay leaves, lightly crushed cardamom and whole cumin. Then I add the marinated rice and sauté it well for about 5 minutes, until the moisture is absorbed and the rice changes to a beautiful golden-yellow colour. Next, I add soaked cashews and raisins, along with two slit green chillies. Then I add water in approximately the same quantity as the rice. The pulao is first cooked on high flame for about 5 minutes, and once it starts boiling, I cover it and cook it on low flame for around 10 minutes. After that, I add about 1 cup of sugar according to taste—you can reduce or increase the quantity depending on how sweet you like your Basanti Pulao. Mix everything very gently so that the rice grains remain intact and fluffy. Cover it again and let it rest for another 5–10 minutes. And that’s it! ❤️ Your perfectly fluffy, fragrant, golden Basanti Pulao is ready—just like the pulao served at a Bengali Puja celebration or traditional অনুষ্ঠান বাড়ি. 🌼 Serve it with Aloo Dum, Cholar Dal, vegetables, or even your favourite Bengali-style meat dishes. It goes beautifully with almost everything! 💛 Bengalis’ favourite pulao – simple, festive, aromatic and absolutely delicious!
