Steamed Masala Chicken
Ingredients for the Marinade
Red chili powder — to taste
Salt — 1 teaspoon
Turmeric powder — ½ teaspoon
Coriander powder — to taste
Cumin powder — to taste
Roasted coriander powder — to taste
Roasted cumin powder — to taste
Garam masala — 1 teaspoon
Ajwain (carom seeds) — ½ teaspoon
Ginger powder — 1 teaspoon
Garlic paste — 2 tablespoons
Red food color — a little
Orange food color — a little
Tikka masala — as required
Yogurt — 1 pouch
Lemon juice — from 2–3 lemons
Fried chicken — as required
Roasted Whole Spice Mix
Whole coriander seeds — 1 tablespoon
Whole cumin seeds — 1 tablespoon
Dried round red chilies — a few
Fennel seeds — 1 teaspoon
Add all the whole spices to a frying pan and dry-roast them over low heat until they become fragrant. Once roasted, let them cool slightly and grind them into a coarse powder.
How to Marinate the Chicken
Take the yogurt in a large bowl. Add all the powdered spices, garlic paste, ginger powder, food colors, tikka masala, lemon juice, and the coarsely ground roasted spice mix.
Mix everything really well.
Now add the fried chicken and coat it thoroughly with the marinade.
Cover and marinate the chicken for at least 1 hour. For the best results and deeper flavor, you can marinate it for a few hours.
How to Steam the Chicken
Take a large piece of aluminum foil and place the marinated chicken in the center. Wrap it tightly in the foil.
Sprinkle a few sesame seeds over the chicken before wrapping, if desired.
If you have a steamer, you can steam the chicken in it.
If you don't have a steamer, you can easily make one using a large pot. Add approximately 1 to 1½ cups of water to the pot.
Place a steel bowl upside down inside the pot and put a steel mesh strainer or rack over it. Place a plate on the rack and put the foil-wrapped chicken on the plate.
Initially, cook on high heat until the water starts boiling and plenty of steam is produced. As soon as the water starts boiling, reduce the heat to low.
Steam the chicken for approximately 30 minutes, or until it becomes completely tender.
🧄 Butter Garlic Topping
For the topping, you will need:
Butter — 1 tablespoon
Oil — approximately 1 tablespoon
Garlic — 1 whole bunch, finely chopped
Add the butter and oil to a pan. Adding a little oil along with the butter helps prevent the butter from burning and keeps the garlic from sticking to the pan.
Add the chopped garlic and roast it well until it changes color slightly and becomes fragrant.
Once the steamed chicken is ready and you're ready to serve it, transfer it to a serving platter and generously sprinkle the roasted butter garlic over the top.
You can also sprinkle some sesame seeds over the chicken and serve it with lettuce or your favorite salad.
The flavor of this chicken is absolutely amazing, so don't skip the butter-garlic topping — it really takes the dish to another level!
