Zhuhai, a city on China's southern coast, comes alive after dark. In this episode, I explore three night markets in one night across Zhuhai, Guangdong — including Xiawan Night Market, one of the busiest street food scenes in southern China. We try salt-and-pepper mantis shrimp, oysters steamed open in a pressure cooker, Cantonese sweet soup, freshly sliced lamb skewers, hand-pulled flying pancakes, beef offal, stinky tofu, egg-filled pancakes, wild cuttlefish, curry-braised fish balls, rotisserie roast meat, and fresh pork rice noodles — with several dishes costing less than two dollars. Xiawan opens at 9:45 PM and runs until 5:30 AM, every night of the year, with more than 80 stalls packed into a single hundred-metre street. It sits right next to the Macau border crossing, so the crowd comes from both sides. This is not a tourist market. This is where people in Zhuhai actually eat after midnight.
