My grandmother never wrote a recipe down. So I did. My full cookbook: https://www.elenimarkos.com
Pull up a stool, agapi mou. If your fried eggs have rubbery bottoms and whites that never quite set around the yolk, let me show you how my yiayia cooked them in Crete. No flipping. No lid. Just olive oil and a spoon.
After twenty-five years behind the counter of my family’s diner in New Jersey, I still come back to her little black pan and those golden, lacy edges.
For two eggs, use a small, heavy pan, about eight inches across, and three to four tablespoons of ordinary olive oil. Crack each egg into a cup first. Heat the oil over medium or a touch above until it shimmers and a tiny drop of egg white sizzles immediately.
Keep your hands and pan dry—hot oil spits. Lower the cup close to the pan and slide the egg in gently. After about thirty seconds, tilt the pan carefully and spoon the pooled oil over the whites, especially the clear part around the yolk. Go around the yolk, not over it. Watch for fully set whites and crisp edges, about a minute and a half to two minutes.
Lift with a slotted spatula and let the oil drip back before plating. Salt, pepper, a little dried oregano, and bread beside it. The yolk is the sauce.
Runny yolks carry some risk. For small children, pregnant people, older adults, or anyone with a weakened immune system, cook the yolk firm or use pasteurized eggs.
Tell me, my friend: do you like your yolk runny or firm?
