One pot of beans could feed our house for days. Not because my mother had some expensive recipe. Not because she used fancy ingredients. She simply understood beans in a way I didn’t appreciate until I had my own kitchen. She knew which beans to buy. When to soak them. When not to. What went into the pot first. When to leave them alone. And most importantly, she never looked at a pot of beans as just one dinner. To her, that pot was the beginning of several meals. Today I’m showing you the little things my mother taught me that made her beans come out tender, flavorful, and useful all week long. 🫘 The Mexican bean tricks my mother taught me: 7. Sort the beans first My first job as a little girl was finding the broken beans, tiny stones, and anything that did not belong. 6. Soaking is not one simple rule My mother knew when soaking helped and when she could simply put the pot on the stove and let time do the work. 5. The pot matters more than people think Not because you need something expensive. Sometimes the old scratched pot is the one that knows how to make dinner. 4. Stop bothering the beans Stirring and poking constantly can turn a beautiful pot into a broken, mushy mess. 3. Build the flavor in the pot Onion, garlic, chile, herbs and a few simple ingredients can completely change inexpensive beans. 2. Never cook only enough for tonight My mother wasn’t making one dinner. She was making tomorrow’s lunch and the beginning of another meal. 1. The second meal may be even better Whole beans today can become refried beans, tacos, tostadas, burritos, rice and beans, or something completely different tomorrow. And that was the real secret. My mother did not ask, “What are we eating tonight?” She asked, “What can this pot become?” One inexpensive bag of beans could become a bowl of frijoles, refried beans the next morning, tacos for lunch, and rice and beans for another dinner.
