A while back I built a clay oven on the back patio, fire clay and sand and straw and a coat of lime, and this is the first time it's ever been on a live show. I lit it at noon because that's how long it takes to get the whole thing hot, not just the inside, and then we spent the evening making pizza in it. Somehow in six years of Side Dish we had never made a pizza, so this one was overdue. The dough went 72 hours from mixing to the oven, the sauce is mine, and everything is on the site.
WHAT'S IN THIS EPISODE
The Oven: Homemade Clay Oven Fire clay and sand for the mass, straw and clay for the insulation, lime slip on the outside for the weather. Wood only. Lit at noon, fed every 20 minutes all afternoon, the dome going white around two o'clock, and a live flame kept going the whole show. How it's built, why noon, why clay and not steel, and what the IR gun does and doesn't tell you.
The Dish: Wood-Fired New York Style Pizza My own dough: half bread flour, half Tipo 00, 0.35% yeast, mixed Wednesday at 7 PM, 72 hours from mixing to the oven. A fire-roasted tomato sauce with garlic, fennel and a little anchovy paste. Stretched to 9 inches, topped light, launched off a semolina peel onto an 800°F deck, 90 seconds to 2 minutes. A benchmark cheese pizza first, then whatever comes up off a topping bar of what's in the house, including one that chat picks.
The Starter: Wood-Fired Garlic Cheese Bread One ball of the same dough stretched into an oval, garlic butter, mozzarella and smoked provolone, herbs from the yard, two minutes in the oven, cut into strips and dipped in the warm sauce.
The Dessert: Cinnamon Sugar Dessert Pizza with Honey The last ball of the night, melted butter, cinnamon sugar, about a minute on the cool side of the deck, honey to finish.
The Drink: Patio Pitcher Margarita Blanco tequila, Cointreau, fresh lime and a little agave, built by the pitcher at the top of the show and poured all night, salt rim, over ice. 2:1:1, the way a Daisy is built, which is what a margarita is.
