I recently left my job, and life has been moving at a slower pace.
On this quiet day in Tokyo, I found a white bitter melon, made a simple vegetarian lunch, and spent a slow afternoon at home.
This is a small glimpse into my everyday life as I take some time between jobs and slowly figure out what comes next.

🍽️ Recipe
WHITE BITTER MELON & EGG STIR-FRY
Ingredients (Serves 1)
• 1/2 white bitter melon
• 2 eggs
• Garlic, to taste
• Cooking oil, as needed
• Salt, to taste
• 1/2 tsp soy sauce
• Dried basil, optional
1. Prepare the bitter melon
Remove the seeds and pith, then slice the bitter melon into 3–4 mm pieces.
If you'd like to reduce the bitterness, sprinkle it with a pinch of salt, leave it for about 5 minutes, rinse lightly, and pat it thoroughly dry.
2. Prepare the eggs
Lightly beat 2 eggs with a small pinch of salt.
3. Soft-scramble the eggs
Preheat a frying pan over medium heat for about 20–30 seconds.
Add a little oil, pour in the eggs, and gently stir them into large curds. Remove them from the pan while they are still quite soft.
4. Cook the bitter melon
Add a little more oil and the garlic to the same pan over medium heat.
Spread out the bitter melon and leave it mostly undisturbed for about 1 minute. Then stir-fry for another 2 minutes, until lightly browned but still slightly crisp.
5. Season
Add 1–2 pinches of salt.
Pour 1/2 tsp soy sauce around the edge of the pan and toss for 10–20 seconds. The soy sauce is just for a little extra aroma rather than a strong soy-sauce flavor.
6. Add the eggs back
Return the eggs to the pan and gently fold everything together 2–3 times.
Turn off the heat as soon as the eggs are cooked through.
Finish with dried basil if you like.
