Learn hyderabadi mirchi ka salan commercial recipe at home.
Friends, in a commercial kitchen, salan is as essential as biryani itself — because without it, the biryani menu is always considered incomplete.
Ever since my Biryani Base Masala recipe became so popular, the one request I kept receiving continuously was: "Madam, teach us the commercial saalan that's served with biryani." Today, by popular demand, I'm sharing the complete commercial recipe for Hyderabadi Mirchi Ka Saalan — a rich, velvety, tangy-sweet gravy made with peanuts, sesame, dry coconut, poppy seeds, and brista, balanced with tamarind and jaggery. Make this saalan, and your biryani orders will go to the next level.
✅ What You'll Learn:
✓ Nut-seed paste technique — 100g peanuts + 50g sesame/til + 50g dry coconut/sookha nariyal + khuskhus/poppy seeds + 50g brista (fried onion) — why cold water must be used for grinding (warm water separates natural oils from peanuts and sesame, making the paste grainy and splitting the gravy)
✓ Chilli selection guide — Bhavnagari (authentic, mild), Picadoll (glossy, market-available, low heat), Bhajji/Bajiya mirch (thick, easy to stuff) — never use small hot green chillies; how to slit and stuff with imli-gur chutney for a chatpata layer that cuts the chilli's heat
✓ Shallow fry protocol for mirchi — medium-high flame, 1–2 minutes only until golden blisters appear on green skin, stay crunchy not soft; cool and store separately from saalan with butter paper layers between batches
✓ Tadka system — 100ml brista-flavoured oil, mustard seeds/rai + cumin/jeera + kalonji + methi dana + curry leaves (digestive balance for the heavy nut gravy) + ginger-garlic paste; add Kashmiri red chilli powder for colour only, turmeric and coriander-cumin powder (3:1 ratio homemade)
✓ Complete commercial storage system: saalan and mirchi stored separately at 4°C — combine only on order, simmer 2 minutes on low, add hot water if consistency thickens; yield: 1.5 kg finished saalan; serve with Dum Biryani, Steamed Rice, Rumali Roti, or Naan

🧾 Brief Summary of Recipe:
To make commercial Hyderabadi Mirchi Ka Saalan for a cloud kitchen or biryani business, dry roast 100g peanuts on low flame 2–3 minutes until golden (no oil — peanuts release their own natural oil), then add 50g sesame, 50g dry coconut powder, and 20–25g poppy seeds for 1 more minute. Cool completely, add 50g brista (fried onions), pulse-grind dry first, then blend with cold water (not warm — warm water separates natural oils and splits the paste) to a smooth, creamy texture. For the chillies, use large mild varieties (Bhavnagari, Picadoll, or Bhajji mirch) — slit lengthwise, optionally stuff with tamarind-jaggery chutney for chatpata flavour, shallow fry in 2–3 tbsp oil on medium-high for 1–2 minutes until golden blisters appear on skin — keep crunchy, not soft. Store mirchi and saalan separately at 4°C. For the gravy: heat 100ml brista-flavoured oil, add mustard seeds, cumin, kalonji, methi dana, and curry leaves, then ginger-garlic paste (1 minute low flame), then Kashmiri red chilli powder, turmeric, and coriander-cumin powder with a splash of water. Add the nut-seed paste, cover and cook on medium flame 10–12 minutes until oil separates, stirring regularly. Add ½ cup tamarind pulp, small piece jaggery, and ~2.5 glasses hot water. Simmer 5–7 minutes until medium consistency. Yield: 1.5 kg saalan. On order, add mirchi to portion of saalan, simmer 2 minutes on low flame, add hot water if thickened. Serve with Dum Biryani, Steamed Rice, or Rumali Roti.
