Dal that matches Dal Makhani in richness, but is completely different in taste and aroma — more royal, lighter on the stomach, and a genuine five-star hotel secret?
Welcome to Dal-e-Khaas — the Mughal kitchen's signature recipe. A blend of three dals, kaju-magaz silky paste, roasted cumin's smoky depth, a pinch of nutmeg-mace, and the final touch that takes it to next level: just 2–3 drops of kewra water. 200g raw dal, 1.3 kg finished, zero whole skin, zero heaviness — just makhmal, reshmi texture in every bite.
✅ What You'll Learn:
✓ Three-dal formula — half cup toor dal + ¼ cup chana dal + ¼ cup dhuli urad dal (200g total): dhuli urad dal gives the fine-dining silky bright golden texture that whole urad never can; chana dal visible as soft whole grains after cooking — that mixed texture is the signature of Dal-e-khaas
✓ Pressure cook with whole spices — 3 cups water, ¾ tsp salt, pinch turmeric/haldi, 1 crushed black cardamom/badi elaichi, 1 bay leaf/tejpatta, 1 tbsp desi ghee — 1 whistle medium then 3 whistles low flame; remove cardamom and tejpatta before mashing
✓ Ghota/mashing technique — hand-mash (not blend) after cooking: toor and urad dal blend completely into smooth cream, chana dal grains remain lightly visible and press to butter-soft when touched — this texture is the visual identity of Dal-e-Khas
✓ Kaju-Magaz paste — 15g cashew/kaju + 10g mixed seeds/magaz (char magaz), soaked in warm water 20 min or blended with tomato puree directly — gives the premium silky richness without heaviness
✓ Tadka sequence — 2 tbsp desi ghee + 1 tbsp butter, 1 large onion finely chopped (light golden-pinkish only, never brown — browning ruins the shahi texture), 1.5 tbsp ginger-garlic paste (60–70% garlic ratio for commercial kitchens), slit green chillies, 2 medium tomatoes (pureed, not chopped), kaju-magaz paste, oil separation check, then 1 tbsp Kashmiri red chilli powder, 1 tbsp coriander powder/dhania, ½ tsp roasted cumin powder/bhuna jeera (not raw — roasted gives earthy smoky flavour that makes Dal-e-Khas what it is)
✓ Final finishing — 1 tsp kasuri methi, ½ tsp Ruby's Signature Garam Masala, pinch nutmeg-mace/jaiphal-javitri powder, fresh cream, 2–3 drops kewra water off-flame (never more — it will overpower), 5 min covered rest — garnish with fresh coriander, butter, cream drops
✓ Yield: 200g raw → 1.3 kg finished dal — same portioning and pricing as Dal Makhni (refer linked video)
Dal-e-Khaas is a Mughal-origin five-star hotel signature dal made from three dals: toor dal (½ cup), chana dal (¼ cup), and dhuli urad dal (¼ cup) — total 200g. Soak 30–40 minutes, pressure cook with 3 cups water, salt, turmeric, 1 crushed black cardamom, 1 bay leaf, and 1 tbsp desi ghee — 1 whistle on medium then 3 whistles on low flame. Remove whole spices and hand-mash: toor and urad dal blend into smooth cream while chana dal grains remain lightly visible and press butter-soft. For the tadka, fry 1 large finely chopped onion in 2 tbsp desi ghee + 1 tbsp butter until only light golden-pinkish (never brown — browning ruins the shahi texture), add 1.5 tbsp ginger-garlic paste and slit green chillies, then 2 medium tomatoes (pureed), 25g kaju-magaz paste (15g cashew + 10g char magaz), and cook until oil separates. Add Kashmiri red chilli powder, coriander powder, and roasted cumin powder (bhuna jeera — not raw). Combine with mashed dal, add hot water for consistency, simmer covered 8–10 minutes on low flame until one united creamy texture forms. Finish off-flame with kasuri methi, ½ tsp signature garam masala, pinch of nutmeg-mace powder, fresh cream, and 2–3 drops kewra water — cover 5 minutes. Yield: 200g raw dal = 1.3 kg finished Dal-e-Khas. Use same portioning and pricing as Dal Makhni for cloud kitchen or tiffin service menus.
